Winter has Arrived

Winter has arrived in Rexburg. It's been snowing and blowing and it hasn't been above freezing for a few days now. One thing I enjoy doing in winter is driving the farm fields on the Bench SE of Rexburg looking for birds (Mostly sorting through hundreds of Horned Larks for Snow Buntings and Longspurs) and enjoying the stark landscape. I found a couple of Snow Buntings, but no Longspurs, Snowy Owls, Gyrfalcons or other goodies. I'm not really a winter person, but I'm trying to make the best of it.

I enjoy your poleline photo. I have driven that road so many times but never attempted to photograph it. I like the result.

By the way, I bought a christmas present for you tonight. You'll love it and you will never guess what it is. : ) The other thing I was going to buy you I thought I should wait until it gets a little closer to christmas. Another Darren favorite. I take such good care of you.

I must say, when I put my mind to it I am a pretty good cook. Plus it is kind of fun.

I just cooked a meal big enough for 5 people. And I had lots of fun doing it. Of course I was the only one around to eat it. So I put 4 servings into some tupperware and I will take it to work tomorrow and see if any of my coworkers want some. Then I ate what was left for dinner tonight.

So here is what I did. I sauted some tofu (garlic flavor) and onions with some olive oil. If I had more time I would have cooked them longer until the tofu was probably half its original size or smaler. I prefer the texture of tofu that has been cooked down more. It becomes more like a meat instead of the musshy stuff it starts off as. That took a while to cook down. Then I poured in a mixture of coconut milk and organic chicken broth that had about 2 tablespoons of curry mixed in. I also tried to mix in some flour to help thicken it but it was pretty lumpy so I skimmed it off the top. Once the tofu, onions and liquid was brought back up to temperture I threw in my mix of vegitables. Broccoli, Cauliflower, Carrots, Red Peppers, Breen Peppers, and at the end I threw in some snow pea pods. I cooked that for about 15-20 minutes at a simmer stirring the entire time. I was overflowing my only skillet so I couldn't really cover it plus I was worried I might burn the coconut milk. After the vegitables were starting to get soft I served it over medium grain rice that I had steamed ahead of time.

Wow was it good.
